Korean Meatballs
INGREDIENTS
Meatballs
- 1 pound ground chicken or turkey
- 1 egg
- 1 slice bread, finely chopped
- 3 green onions, sliced thinly (put aside some extra of the green part for garnish)
- 2 tablespoons tomato paste
- 1 tablespoon ground ginger
- 1 tablespoon low sodium soy sauce
- 1/4 teaspoon salt
- 4 garlic cloves, minced
Glaze
- 1 tablespoon seasoned rice vinegar
- 1/4 cup light brown sugar
- 1 tablespoon low sodium soy sauce
- 1 tablespoon tomato paste
DIRECTIONS
- Preheat oven to 425F degrees
- Combine meatball ingredients. Don’t over mix.
- Lightly grease a sheet pan
- Shape meatballs and place on pan
- Bake for 10-15 minutes
- To make the glaze, combine glaze ingredients in a sauce pan on low heat until it thickens
- Once meatballs are done, serve over rice
- Use a brush or spoon to put glaze over meatballs
- Garnish with sesame seeds and green onion
Note: Feel free to try ground beef, pork, etc. A yummy side for this meal is sautéed bok choy!
