Chocolate Chip Banana Muffins!
I have tried countless recipes, alternatives, etc., and I have finally found the perfect recipe. I used to be obsessed with making a loaf, (and still am!), but my new favorite thing to do is make them into muffins!
I love to make these on the weekends, when I have visitors (especially because it makes the house smell amazing), and when I want to make a quick and easy snack!
Ingredients
- 2 Cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 Cup butter (I use Can’t Believe It’s Not Butter or Smart Balance)
- 3/4 Cup Brown Sugar (make sure you press down the sugar in the cup when measuring this part.)
- 2 Eggs
- MOST IMPORTANT PART: 4 Extremely Ripe Bananas Mashed. (They should be all brown on the peels, no yellow at all practically. The banana itself should be mushy and a dark yellow.)
- Pack of Milk Chocolate Chips (I love the Trader Joe’s brand, only $1.99!)
Instructions
- Preheat oven to 350 degrees.
- Make sure you grease your muffin pan.
- In a bowl, combine flour & baking soda. Mix these ingredients well and put aside.
- In another bowl, mix butter and brown sugar until creamed. Note: If you use any dairy free butter alternative, it won’t necessarily cream, but that’s okay! Just mix it really well with a whisk or standing mixer.
- Stir in eggs and mashed bananas to the sugar and butter mixture, mix well.
- Then, add dry ingredients to wet ingredients and mix well. Note: It’s okay if it’s lumpy, it shouldn’t be an extremely smooth batter.
- Pour final mixture a little more than 3/4 full in each muffin holder. Note: You will have a little extra batter using the muffin method. I suggest putting any extra batter aside, and then re-filling the tray when the first batch is done. Or (what I do) fill the muffin tray to the brim! These muffins don’t rise too much.
- Now that your mixture is in your pan, you will add about 8-10 chocolate chips per muffin (I love chocolatey muffins!). Once you’ve put these on top, grab a fork and stir them in so they are submerged by the batter. Then, for presentation, put 3 chocolate chips on the center of each muffin.
- Bake in preheated oven
- Muffin Tray: Bake at preheated 350 degree oven about 13 minutes, check at 10 minutes. Knife should come out clean, but it will will never come out completely clean because of the moisture from bananas.
