Cheesy Mini Peppers

Ingredients

  • Mini sweet peppers, remove top and seeds, slice down middle
  • Green onions, sliced
  • Cheese of choice, I used cheddar
  • Olive oil
  • Pepper

Directions

  • Pre-heat oven to 375F degrees
  • Lightly coat peppers in olive oil
  • Cook peppers for about 5 minutes to soften
  • Take peppers out and add cheese
  • Top with green onions
  • Sprinkle with pepper
  • Broil on high until cheese is melted

Tip

These are so flavorful and easy to make–Chris loved them. Perfect for a cold day.
