Cheesy Mini Peppers
Ingredients
- Mini sweet peppers, remove top and seeds, slice down middle
- Green onions, sliced
- Cheese of choice, I used cheddar
- Olive oil
- Pepper
Directions
- Pre-heat oven to 375F degrees
- Lightly coat peppers in olive oil
- Cook peppers for about 5 minutes to soften
- Take peppers out and add cheese
- Top with green onions
- Sprinkle with pepper
- Broil on high until cheese is melted

These are so flavorful and easy to make–Chris loved them. Perfect for a cold day.
