Korean Meatballs

INGREDIENTS

Meatballs

  • 1 pound ground chicken or turkey
  • 1 egg
  • 1 slice bread, finely chopped
  • 3 green onions, sliced thinly (put aside some extra of the green part for garnish)
  • 2 tablespoons tomato paste
  • 1 tablespoon ground ginger
  • 1 tablespoon low sodium soy sauce
  • 1/4 teaspoon salt
  • 4 garlic cloves, minced

Glaze

  • 1 tablespoon seasoned rice vinegar
  • 1/4 cup light brown sugar
  • 1 tablespoon low sodium soy sauce
  • 1 tablespoon tomato paste

DIRECTIONS

  • Preheat oven to 425F degrees
  • Combine meatball ingredients. Don’t over mix.
  • Lightly grease a sheet pan
  • Shape meatballs and place on pan
  • Bake for 10-15 minutes
  • To make the glaze, combine glaze ingredients in a sauce pan on low heat until it thickens
  • Once meatballs are done, serve over rice
  • Use a brush or spoon to put glaze over meatballs
  • Garnish with sesame seeds and green onion

Note: Feel free to try ground beef, pork, etc. A yummy side for this meal is sautéed bok choy!
