Spinach Mac & Cheese
INGREDIENTS
- Whole milk
- Spinach leaves
- Flour
- Butter
- Cheese of choice, I used an aged white cheddar, grated
- Elbow pasta, cooked
- Onions, sautéed
- Pease
- Garlic powder
- Salt and Pepper
DIRECTIONS
- To make the sauce, blend together milk and spinach
- In a saucepan, on medium heat, add butter and flower to make a roux
- Once well heated, add milk and spinach mixture
- Stir well on medium-high heat until thickened
- Add grated cheese until desired flavor is achieved
- Add onions and peas, and any sautéed veggies of choice
- Add salt and pepper, and garlic powder to taste
- Add elbow pasta
Tip
This recipe is made with babies and toddlers in mind. That’s why it calls for whole milk, and hides the spinach in the sauce 🙂
