Spinach Mac & Cheese

INGREDIENTS

  • Whole milk
  • Spinach leaves
  • Flour
  • Butter
  • Cheese of choice, I used an aged white cheddar, grated
  • Elbow pasta, cooked
  • Onions, sautéed
  • Pease
  • Garlic powder
  • Salt and Pepper

DIRECTIONS

  • To make the sauce, blend together milk and spinach
  • In a saucepan, on medium heat, add butter and flower to make a roux
  • Once well heated, add milk and spinach mixture
  • Stir well on medium-high heat until thickened
  • Add grated cheese until desired flavor is achieved
  • Add onions and peas, and any sautéed veggies of choice
  • Add salt and pepper, and garlic powder to taste
  • Add elbow pasta

Tip

This recipe is made with babies and toddlers in mind. That’s why it calls for whole milk, and hides the spinach in the sauce 🙂
