Banana Oat Bread
INGREDIENTS
- 1 ¼ cup flour
- 1 cup oatmeal
- 1/4 cup flaxseed
- 1/4 cup chopped pecans
- ¾ cup light brown sugar
- Swirl of date syrup
- 2-3 very ripe bananas, mashed
- ½ cup coconut oil, melted
- 2 large eggs
- ¼ cup oat milk
- 2 teaspoon vanilla extract
- 2 teaspoons cinnamon
- 1 teaspoon salt
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1-2 handfuls of chocolate chips
DIRECTIONS
- Pre-heat oven to 350F degrees
- Mix all wet ingredients well until smooth
- Mix dry ingredients and add to wet ingredients
- Grease a loaf pan, line with parchment paper, and add mixture
- Tap pan on counter to release any bubbles
- Sprinkle with oats
- Bake for 40-60 minutes, poke with knife to check if it’s cooked
Note: Convection ovens will bake faster
