Banana Oat Bread

INGREDIENTS

  • 1 ¼ cup flour
  • 1 cup oatmeal
  • 1/4 cup flaxseed
  • 1/4 cup chopped pecans
  • ¾ cup light brown sugar
  • Swirl of date syrup
  • 2-3 very ripe bananas, mashed
  • ½ cup coconut oil, melted
  • 2 large eggs
  • ¼ cup oat milk
  • 2 teaspoon vanilla extract
  • 2 teaspoons cinnamon
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1-2 handfuls of chocolate chips

DIRECTIONS

  • Pre-heat oven to 350F degrees
  • Mix all wet ingredients well until smooth
  • Mix dry ingredients and add to wet ingredients
  • Grease a loaf pan, line with parchment paper, and add mixture
  • Tap pan on counter to release any bubbles
  • Sprinkle with oats
  • Bake for 40-60 minutes, poke with knife to check if it’s cooked

Note: Convection ovens will bake faster
