Andy’s Favorite: Mabo Tofu
Ingredients
Main
- 1 Tablespoon dried red peppers, sliced thinly (no seeds)
- 1 Tablespoon fresh ginger, minced
- 1 Tablespoon fresh garlic, minced
- 1/2 pound of ground pork
- 1 Tablespoon cornstarch mixed with a little cold water
- 1 block of firm tofu (Publix Greenwise is my favorite), cut into 1 inch cubes
- 2 green onions, cut thinly
- 1 teaspoon sesame oil
- Cooked jasmine rice
Sauce
- 2 Tablespoons reduced sodium soy sauce
- 2 Tablespoons white miso paste
- 2 Tablespoons sake
- 2 Tablespoons sugar
- 1 cup of water
Directions
- Mix all of the sauce ingredients, put aside
- Add oil to a saucepan (sesame or olive work well) and heat to medium
- Add red peppers, garlic, ginger–and let heat for a minute or two
- Add ground pork and cook until it is ground up
- Add sauce, bring to a simmer/boil and stir in cornstarch mixture
- Lower heat to a simmer, add tofu–simmer for about 5 minutes
- Add green onions and sesame oil
- Serve with rice
