Andy’s Favorite: Mabo Tofu

Ingredients

Main

  • 1 Tablespoon dried red peppers, sliced thinly (no seeds)
  • 1 Tablespoon fresh ginger, minced
  • 1 Tablespoon fresh garlic, minced
  • 1/2 pound of ground pork
  • 1 Tablespoon cornstarch mixed with a little cold water
  • 1 block of firm tofu (Publix Greenwise is my favorite), cut into 1 inch cubes
  • 2 green onions, cut thinly
  • 1 teaspoon sesame oil
  • Cooked jasmine rice

Sauce

  • 2 Tablespoons reduced sodium soy sauce
  • 2 Tablespoons white miso paste
  • 2 Tablespoons sake
  • 2 Tablespoons sugar
  • 1 cup of water

Directions

  • Mix all of the sauce ingredients, put aside
  • Add oil to a saucepan (sesame or olive work well) and heat to medium
  • Add red peppers, garlic, ginger–and let heat for a minute or two
  • Add ground pork and cook until it is ground up
  • Add sauce, bring to a simmer/boil and stir in cornstarch mixture
  • Lower heat to a simmer, add tofu–simmer for about 5 minutes
  • Add green onions and sesame oil
  • Serve with rice
