Yummy Baked Salmon

INGREDIENTS

  • 1lb Fresh (not farm-raised) salmon, rinse and dry with paper towel
  • 1 lemon, half thinly sliced, half juiced
  • 2 garlic cloves, lightly chopped
  • Desired amount of asparagus, enough to fill baking tray
  • 1 yellow squash, sliced, half inch
  • Salt & pepper
  • Olive oil

DIRECTIONS

  1. Preheat oven to 425 degrees F
  2. Sprinkle salt & pepper on both sides of salmon, rub in, allow to sit for 15 minutes
  3. Arrange asparagus on tray to hold salmon
  4. Drizzle olive oil over asparagus, and then sprinkle salt & pepper
  5. Lay salmon, skin down, on asparagus bed
  6. Arrange squash around salmon, sprinkle each with salt & pepper
  7. Arrange lemon slices on salmon
  8. Arrange garlic on and around salmon
  9. Pour juice of half the lemon onto salmon
  10. Cook entire tray for 20-25 minutes or until salmon is “flaky”

Tip

Asparagus and squash are very filling sides, you could also choose broccoli, cauliflower, zucchini, green beans, etc.
